It’s time for another instalment of Chef Duets, in partnership with Madrí Excepcional, where we team up a top British chef with one of the biggest names in Spanish food and ask them to create an extra special dish that fuses the culture and flavours of our two great nations. Today, we’re over in Manchester where chef Julian Pizer, from Another Hand spent the afternoon with Roberto Foronda from Madrid’s El Triperito, cooking up a souped-up take on one of Pizer’s most beloved dishes. The cabbage he serves up, with smoked mussels and pancetta, at his veggie-focused restaurant is the dish everyone demands when they visit. Now, Roberto is giving it some Spanish flare with a spicy Bravas sauce.   Below, you’ll also find the recipe for this brand-new fusion dish, so you can attempt it at home – paired with a refreshing Madrí Excepcional, of course.   Tell us a bit about the kind of cooking you’re known for... Roberto: I’m a chef from Madrid with two restaurants inside two markets: Mercado de la Paz and Mercado de Vallehermoso. One is Tripea, it's typical Peruvian cuisine, Asian and Spanish. For the past month, a little bit of Portugal has found its way to Dumbo. In honor of the World Cup, Brooklyn’s Time Out Market New York has been transformed into Portugal House, a lively fan hub for all soccer-related activities and a cultural showcase that introduces the range of food, wine, and beauty found across Portugal. Since June, the pop-up has shone a light on the most magnificent cities and regions through gastronomy and drink, with stopovers in the country's central hub, Lisbon, and a tour of the dramatic volcanic landscapes of the Azores. The last pitstop will highlight the country’s southern side, and you won’t want to miss it.  On July 13 and July 14, head to the Market for a taste of Alentejo. Kick off the afternoon with live musical acts on the terrace from Helena Caldeira & Surma and Valas and Tozé Bexiga. Chef Filipe Macedo of Portugal's Páteo Real will take over the roof kitchen to bring the experience home, handing out free passed bites of bacalhau d’oro, a classic Portuguese-style cod dish. Portuguese wines will be available for purchase, including selections such as the João Portugal Ramos Reserva and João Portugal Ramos Alvarinho.  The music starts at 1:30pm and free bites start at 2:30pm. Una dieta de supervivencia: macarrones y escalopa Ante el hipotético escenario de un apocalipsis, Díaz lo tiene claro. Ni trufa, ni esferificaciones: "Salvaría los macarrones, las croquetas y la escalopa". Una elección que los presentadores han bautizado humorísticamente como la "dieta infantil", y con la cual el mago se ha sentido plenamente identificado: "Podrían ser la base de toda mi alimentación", ha bromeado. There’s a one in 653,000 chance of death when you do a tandem skydive in the UK and there were reportedly no fatalities in the 20 years between 1997 and 2016. Statistically, that’s much safer than hiking. I knew all this, but that didn’t stop me from thinking about death approximately 19 times a day in the weeks leading up to my jump. The possibilities of death, it seemed, were endless. I had dreams of my eyeballs being sucked out of my head while falling at a hundred miles per hour and of Storm Darragh pushing me off course into the icy waters of the North Sea. I’d had dark thoughts about the parachute being unable to go up; darker thoughts of a bird crashing into me as it travelled south for winter and toppling to my grave in a pile of feathers, beak and blood. I have a fear of heights. It’s not unreasonable, it doesn’t restrict my daily life, but it is very much there. It’s the impending drop which gets me: the empty space, the threat of gravity, uninterrupted. I hate jumping off cliffs into bodies of water and looking down from the tops of tall buildings makes my stomach turn. If I think too much about it, I start to feel a dizzying panic, a walls-closing-in sort of anxiety, like the floor could give away at any minute. A skydive would be a chance to prove to myself that, while not completely ridiculous, this fear was irrational in most scenarios.
