This year’s festival food is almost as hot as the artists

A decade ago, festival food was mostly simple, a bit uninspiring and cheap. Nothing wrong with that, but times have changed and festival food has changed with them. So far, Gothenburg’s festival summer has been marked by top-notch food, including at Slakthuset Block Party in July, so we expect nothing less from Way Out West in August.
And as Slottsskogen welcomes crowds to the year’s most anticipated festival, the food lineup is looking every bit as interesting, with some of Gothenburg’s hottest restaurateurs ready to serve from the food stalls.
But where can you find the weekend’s best bites, which dishes are tipped to be this year’s big hits and which food stops have the best chance of making your festival day complete?
We’ve checked out this year’s food offering and picked the dishes we’ll be queuing up for ourselves. In short, the best festival food at Way Out West.
Is this the most Gothenburg thing you can eat right now? We think so! It’s neither fish nor seafood, but the city’s most talked-about – and seriously tasty – ramen. Behind the Broth Boy phenomenon are Martin Bäckius and his right-hand man Edvin Högström. They were dishing up food at last year’s festival too, and demand was high. So get there early and pack a little extra patience in case there’s a queue.
The tiny but mighty joint from Majorna is coming to Slottsskogen to serve up tacos. Hermanos Tacokiosk made it onto Time Out’s list of Gothenburg’s best restaurants, and rightly so – it’s simple, ridiculously good and not something you’ll want to miss at Way Out West.
Bikt opened next to Gothenburg Cathedral in 2022 and quickly got people talking, not least thanks to its calzone filled with cheese and herb butter. Whether it’ll make an appearance on the menu at Way Out West remains to be seen – if not, there’ll be other equally tasty dishes from the French and Spanish kitchens.
She was crowned Chef of the Year in 2022 and served ‘culture porridge’, with flavours of Jerusalem artichoke, tart apple and wild mushrooms, at the 2024 Nobel banquet – a dish that divided opinion. Personally, I’d have sacrificed my right little toe for a taste of her hearty, luxurious porridge. Luckily, there’s no need for any major sacrifices this year – just head to Way Out West for an updated version of the iconic dish.
What started as a food truck has expanded to three permanent locations across Gothenburg in just a couple of years. Their regular menu features both an Italian and a Korean sandwich. Which ones they’ll bring to Way Out West remains to be seen, but you certainly won’t leave hungry.
