Singapore’s swankiest rooftop restaurant and lounge has undergone a makeover, and it’s looking sleeker than ever. And, coincidence? The unveiling of version 2.0 of CÉ LA VI Singapore at Marina Bay Sands coincides with its 15th anniversary. Now able to seat 151 guests, the space is split into a main indoor dining area with a bar counter and mirrored ceiling, open-air seats with ocean views, and an expanded private dining room decorated with botanical-themed wallpaper.
TIME OUT TIP Don’t skip on a bathroom break, because the lavatories have also been similarly jazzed up with eclectic yet artful plant-inspired motifs.
The new menu features Asian flavours with a modern twist, which you can savour in both five-course degustation sets and a la carte dishes. Items include a buttery A4 Miyazaki Beef Tataki with turmeric leaf oil, balsamic pearls, and smoked soy aioli; fluke sashimi; a refreshing daikon apple salad; and desserts like the dulce miso toffee, a sticky date pudding with gula melaka and a dollop of spice with cardamom mousse. Cocktails here are similarly Asian-inspired.
Of course, CÉ LA VI’s beloved sky lounge remains, with high-octane events and parties at 57 storeys high. With panoramic views of the city, this area is also a prime fireworks-viewing spot during special occasions. And just like every year, the establishment will once again be hosting its annual New Year’s Eve countdown party in the sky on December 31 with a round of day-to-night revelry.
