Chef Saulo Jennings from Pará, of Casa do Saulo, has set up shop in Rio inside the Museum of Tomorrow. With a space full of regional touches, the Santarém-born chef brought to Rio a delicious taste of Tapajonic cuisine.

The Smoked Pirarucu Carpaccio is a great way to start — served in thin slices with buffalo cheese cream and grated Brazil nuts. Still among the starters, this is the perfect place to try an authentic tacacá.

For mains, go for the tambaqui ribs, a river fish quite different from anything typically found in Rio. Another standout dish created by Saulo is the feijoqueca, featuring a pirarucu medallion with shrimp in moqueca sauce, Santarém-style beans, plantains, crispy jambu, and Bragantina farofa.
