Aquaria Restaurant, tucked inside the Spice Garden compound in Chiang Mai's old city, is running ‘When the Rain Falls’ through August, a Mediterranean-inspired four-course menu built around the mood of rainy season. Chef Phubase explores mountain flavours and the deep green of Chiang Mai in the wet months, channelled through comfort dishes like homemade pastas, cured meats and top-quality seafood – all with a twist. Each course comes paired with its own cocktail or mocktail, tuned to match what's on the plate.
