We want to introduce everyone to QULTURE Bangkok, a Southern American kitchen a couple of minutes’ walk from Thonglor BTS, serving the food you’d get round a friend’s house in Mississippi. ‘90s R&B plays low, the cove lighting stays warm and nobody hurries you towards the door.
The chef behind it, Brandon Orange, is a retired military veteran with Le Cordon Bleu training. He first came to Thailand for a software consulting job, then chose food instead, and now runs the Bangkok branch with his son Brian, plus a second spot in Pattaya.
The room keeps things comfortable without fuss, all pale timber, a rough stone wall, brass touches and curved seating built for a long, slow lunch.
The mocktails pull their weight too. Tropical combination mixes pineapple, coconut, lime and lychee under a soft froth, while the virgin peach blossom arrives in a flower-stuffed wooden box, spun over a flame at your table before you drink it. Theatrical, yes, but the ginger-peach and cranberry underneath genuinely work.
For mains, Aunt Evelyn’s fried chicken comes crisp and properly seasoned, with rosemary running through it. But the one to order is the Mississippi blackened sea bass, a fillet under Cajun butter next to a mound of dirty rice, broccoli and a charred lemon wedge. Rich and bold, though the lemon keeps it in check.
