For many restaurants, earning a Michelin star is one of the ultimate goals. Those coveted stars are only handed out once a year (normally in February), but to be in the running, restaurants must first be part of the Michelin Guide. And new places are added to that every single month.
Anonymous inspectors tuck into dishes at dozens of restaurants across the British Isles to meticulously judge which ones deserve a spot. Whether a restaurant makes the guide depends on five criteria: quality ingredients, flavour, cooking techniques, consistency and whether the chef’s personality shines through the dishes. Not much to ask, then. In August 12 restaurants in the UK passed the test with flying colours.
After having no restaurants in the guide, Worthing now boasts two Michelin-approved establishments. The first is the north Indian-influenced Bauji and the second is fine-dining spot Tern. Several other seaside spots were among the new additions. There’s the ‘passionately run’ vegan diner Aster in Broadstairs, the ‘simple, ingredient-led’ Wellington pub in Margate and Bolberry Down’s Thirty Three by the Sea which offers ‘fresh, flavoursome cooking’ on a remote headland.
In Cardiff, Tom Simmon’s newest restaurant Lofft got Michelin recognition. The intimate spot was added to the guide for its ‘pure, refined’ cooking and ‘impressive’ service. And in Manchester, The Trof, a newly renovated pub and dining room celebrated its initiation into the guide. Michelin said that it’s ‘a welcoming spot where the ground-floor pub is ideal for a pint and a snack, while the upstairs dining room is the setting for mightily appealing British dishes that come with full-force flavour’.
