Shrimp ramen is a rarity in Tokyo, so this Azabu-Juban joint fills a real need with its aromatic and flavourful ebi-meets-tonkotsu soup. Their signature dish is the shio ramen, each bowl of which is made with an eyebrow-raising 40 shrimp, but you'll also find miso, shoyu and curry varieties on the menu. ¥1,200 per serving sounds a little steep, though.
