The bifana is, hands down, one of Portugal’s most beloved street snacks. Lately, the iconic sandwich—marinated pork served on a warm, crusty roll—is making waves on the streets of New York, thanks to Fernando Vaz. Noticing that Americans were finally catching on to the beauty, culture and food of his home country, the Portuguese chef set out to bring the bifana stateside. Mr. Bifana focuses on traditional preparations: slow-cooking Iberian pork, thinly slicing the meat, carefully nestling it into a Portuguese roll and always finishing it with a nice dip of jus. Building on the bifana, Mr. Bifana will also feature an assortment of Portuguese cheeses, fish cakes and another one of the country’s calling cards: pastéis de nata.
