No festive feast is complete without a stellar drinks list. Head mixologist Kevin Botte will be serving up a lineup of holiday-inspired cocktails throughout December. Standouts include a Christmas-inspired Negroni, the Frost & Flame, made with homemade lemongrass cordial, and a white mulled wine infused with lime, vanilla, orange juice, and stone fruit. There’s also a festive mocktail, Rudolf’s Spritz, featuring agave, hibiscus, and Blå Tea, garnished with fresh fruit.

On New Year’s Eve, The Dining Room will host two dinners. The early session features a three-course menu from $495 per person, while the late seating offers a lavish five-course experience for $1,450 per person. Think chilled Western Australian marron and Rangers Valley 7+ Wagyu striploin. Private dining options are also available for those seeking an ultra-exclusive celebration.

After dinner is when the real party begins. Head to the rooftop – one of Sydney’s most sought-after vantage points for the fireworks – where you’ll enjoy free-flowing Champagne, premium wines and spirits, roaming canapés, and decadent desserts. A live DJ will be spinning tracks all night long and a rotational chef station will make sure you’re well fed at all times – from caviar bumps to grilled yakitori skewers. Standing tickets start at $1,100, while private cabanas – complete with unbeatable views of the Opera House and Harbour Bridge – are available for $10,000.
