This luxe, 130-room hotel is opening just outside of Sydney this December

Stretching into the sky for 28 storeys, Voco Gosford will feature a swim-up bar, a rooftop izakaya and so much more

It’s been more than a year since the initial plans were revealed for the Central Coast’s mega hotel development, a new super-luxe stay promising far-reaching views, a glittering rooftop ballroom and a stunning swim-up bar. Now, we've got updates – including an official opening date for the huge new hotel.

This summer, Voco Gosford will officially open its doors – complete with 130 luxe hotel rooms and some seriously impressive (and seriously elevated) venues. Perched on Level 28 as the jewel in the hotel’s crown, Astra, the precinct’s rooftop bar and Japanese dining concept, will stake its claim as the Central Coast’s highest rooftop bar – offering sky-high cocktails, fire-driven dining, and sweeping vistas that stretch across the bay.

Just over an hour’s drive from Sydney, Voco Gosford – part of IHG Hotels & Resorts’ premium portfolio – will set a new standard for coastal luxury in the area, with guest rooms featuring plush bedding, modern bathrooms, floor-to-ceiling windows and balconies opening up to views along the coastline. According to the team, the ambitious new venue is on track to open on December 1 2025 – just in time for the summer rush.

Guests at the new hotel will be able to spend their days lounging by the podium-level pool, cooling down with a cocktail at the swim-up bar, unwinding in the wellness centre, or sampling the precinct’s six dining and bar experiences. Family-friendly Archies will serve Aussie pub classics, Ironbark Kitchen will be the place to come for woodfired steaks, trattoria-style Italian eatery Paolo’s will be the go-to for hand-rolled pasta, and the pool bar will be the place to beeline for on a sunny Saturday.

But based on what we know so far, it's the sky-high Astra that will steal the spotlight. Led by Michelin star-trained Executive Chef Maxime Chasseriaud and Sous Chef Harry Cho, the rooftop izakaya will offer Japanese-inspired dishes with a fire-driven edge. Dining here will be part theatre, part precision – perfectly paired with cocktails designed to catch the golden hour light and the glittering night’s sky.
