What is it? Two-Michelin-starred restaurant by British chef Kirk Westaway, bringing inspiration from his hometown of Devon into the interiors and menu.

Why we love it: Save for the striking view of Singapore’s iconic skyline, the intimate 35-seater references the picturesque coast of Devon in its romantic, elegant decor. Besides that, it’s gained quite some love for its charred leek and potato soup, a hearty opening to the meal present in every menu and served right after a trio of snacks. There's also the classic British dish, fish and chips, that are reinvented with touches of sour cream, lemon and caviar.

Time Out tip: Your carb-free diet can take a pause when the freshly baked breads are brought out – everything from dark rye rolls and crispy sourdough buns is to be paired with an aromatic Devonshire butter topped with thyme.

Perched on the 52nd floor of Capital Tower, SUSHISAMBA Singapore offers 360-degree views, with the floor-to-ceiling windows framing the city like a masterpiece. By day, the skyline stretches endlessly across the CBD and out to sea; by night, it’s a glimmering cityscape of light and movement. The magic hour truly unfolds at sunset, when the space is washed in a golden glow that brings out the room's vibrant orange, yellow, and green hues.

THE FOOD If Tokyo, Rio and Lima had a delicious culinary baby, it would be SUSHISAMBA. This globe-trotting menu serves up bold bites across Japanese, Brazilian and Peruvian lines – but it’s not just sushi and ‘seviche’. There are fan favourites like Chilean sea bass (from $39) and grilled kurobata pork belly (from $68), as well as two SAMBA roll exclusives (from $38): the SAMBA Singapore Roll with Maine lobster, mango, and avocado, and the SAMBA Chilli Crab Roll with crispy soft-shell crab, chilli crab sauce and yuzu mayo. The open kitchen also amps up the drama with sizzling robata flames and artfully torched nigiri, while signature cocktails round out the party.

What is it? A romantic, semi-casual seaside restaurant at East Coast Park by ex-Braci chef Mirko Febbrile, serving uncomplicated Italian fare.

Why we love it: Breezy holiday vibes are strong here, and the food is an assemblage of familiar Italian dishes from the Puglian countryside. The baked focaccina is a must-order alongside San Marzano tomatoes or fresh buffalo mozzarella. The small plates feature seasonal ingredients like Cardoncelli mushrooms or charred red peppers and Cantabrico anchovies. Desserts come in a cart and you get to choose from a smorgasbord of cakes, pastries and even ice creams. Our pick? Definitely the iconic cannoli and the luscious burrata gelato.

THE VIEW There’s plenty to love about Maison Boulud – it woos you with soulful French classics, dreamy vibes, and views that’ll make you swoon. Sitting pretty along the waterfront promenade of Marina Bay Sands, this two-storey stunner brings serious French Riviera glamour to Singapore. Dine alfresco upstairs with a glass of bubbly in hand or soak in the Mediterranean-inspired interiors that seamlessly blend coastal opulence and rustic charm. 

THE FOOD Maison Boulud is also as much a feast for the palate as it is for the eyes. Helmed by the legendary chef Daniel Boulud, the menu reflects the elegance of its stunning surroundings, drawing inspiration from France’s changing seasons, Boulud’s childhood, and his travels. Must-try dishes include the luxurious plateau de fruits de mer (from $135), brimming with the freshest seafood and caviar.

5. Dusk @ Mount Faber Peak

What is it? Located some 100 meters above sea level at Faber Peak, this romantic restaurant is flanked by lush rainforests and sweeping views of Harbourfront and Sentosa Island. 

Why we love it: As you take in the gorgeous views, indulge in Dusk’s selection of hearty mains and sharing plates – most European-style dishes with Asian touches. Signatures include the tiger prawn capellini – a perennial favourite here; Hokkaido scallops; braised beef cheek; and pan-seared Atlantic salmon. Round off the meal with a classic Guinness chocolate cake. Next, check out the recently refreshed Mirabilis Bar for floral and fruit-forward cocktails (from $18) to end the night.

Time Out tip: You guessed it – the ideal time to visit is at... dusk. To get here, you'll need to purchase a cable car ticket up to the restaurant or drive in. Once you've arrived, grab a seat at the open deck to enjoy prime views of the setting sun and cable cars.

6. Vue

What is it? Vue is the French translation of the word 'view'. From its high floor-to-ceiling windows. At this popular anniversary spot, you'll get to soak in breathtaking views of the Civic District from the 19th floor of OUE Bayfront.

Why we love it: Majestic views aside, the restaurant also serves a grand menu of binchotan-grilled meats. A selection of prime beef cuts is available, from American USDA Prime ribeye to the Japanese A5 Emperor “Kokuou” Black sirloin. There are plenty of menus to pick from – the three, four or five-course prix fixe experience, or the three-to-four-course sunset dinner (from $88) for the full works. 

Time Out tip: Start with a drink at the open-air spritz bar before dinner. We also hear the pan-seared Périgord foie gras with smoked chocolate crumbles and apricot confit is well worth the $8 top-up.

7. Kaarla

What is it? Located on the 51st level of CapitaSpring, Kaarla-Oumi is a feast for the eyes and the stomach.

Why we love it: The understated palettes of granite, beige, and moss green finished with natural stone and a wood-veneered ceiling, inject pure elegance into the interior space. Of course, there's the panoramic view of the city lights below. And it only gets better when you step out into 1-Arden Food Forest in the backyard. Progressive Coastal Australian in nature, the menu highlights quality seasonal produce similar to what you'd find in other fine dining establishments in the city. Honouring farm-to-table, food is kissed by fire and paired with a beautifully curated wine list. Feeling adventurous? Order the salt-cured and smoked kangaroo, spruced with garden daikon, bush tomatoes, lime, begonia, and topped off with an anchovy emulsion.

Time Out tip: Take a stroll in the picturesque garden before or after dinner. And for the best experience, book ahead to secure a window seat.

What is it? Casual Mexican waterfront restaurant at Customs House overlooking Marina Bay.

Why we love it: Can't get a table at Caffe Fernet? Hop on over to Super Loco Customs House for some lip-smacking Mexican food instead. It's not just a solid second choice, though. The signature dishes hold their own – think tacos with usual fixings of baja fish, carne asada, prawn and even a vegetarian option with the lion's mane mushroom al pastor. The mango ceviche with sustainably-farmed seabass is another good shout. And if you're visiting for a birthday celebration, you might get lucky with a plate of complimentary churros.  

Time Out tip: Pop by during the daily El Loco happy hour which runs from 3pm to 7pm. Frozen Margs, wine, and beers go at $10 each As do the spirits, which include coffee gin, vodka and dark rum. Loco Hour snacks are not to be missed either – go ham on the chips and salsa, smoked cheese quesadilla and more.

9. Altro Zafferano

What is it? This sky-high Italian restaurant on the 43rd floor of Ocean Financial Centre has unbeatable views of Marina Bay Sands and the Marina Bay area. 

Why we love it: Ideal for client lunches, the Italian restaurant showcases seasonal produce in its two and three-course lunch menus (from $58). Head chef Andrea De Paola – who has worked in big-name kitchens including former Michelin-starred Braci – often taps into inspiration from his hometown in Naples to whip creative contemporary Italian dishes. The wagyu ribeye and pan-seared cod with red prawns and seafood casserole from the dinner menu are fail-proof options. Also check out the restaurant's extensive selection of over 800 New and Old World wines, with over 70 percent flown in from Italy.

Time Out tip: While the entire space is fitted with floor-to-ceiling panels, it’s the open-air sheltered bar outside that offers the best views. Plush sofas are arranged in romantic two-by-two settings directly facing the window, creating the ideal atmosphere for a cosy nightcap.

10. Monti

What is it? Taking over the space voided by Catalunya at Fullerton Pavilion, this swanky Italian restaurant and bar pulses with the life by the bay.

Why we love it: The Singapore River Cruise boats get pretty up close to the glass dome Monti is housed in, and if you time it right, you'll also get to catch Marina Bay Sands' light and water show Spectra from across the bay. Monti makes its pasta fresh every day, while its mains run the gamut from the fish of the day (market price) to meats like beef ribeye and pork grilled in its Inka oven. The communal set menu includes the restaurant's signature truffle focaccia to start, plus a selection of appetisers from burratina cheese to beef tartare. Then dive into mains like the signature Acquerello Risotto with shavings of seasonal truffles and aged Parmigiano Reggiano. Desserts include a zesty lemon basil curd or the rich Sicilian Cassata. 

Time Out tip: Make your way up to the alfresco rooftop for the best pictures of the bay and to enjoy the evening breeze.

11. Caffe Fernet

What is it? Gorgeous from the inside out, Caffe Fernet's long bar beckons with warm tones of brown, brick red and gold, while the restaurant opens out into a lovely patio with glistening views of Marina Bay Sands. 

Why we love it: It's elevated Italian comfort food on the menu. Several showstoppers include the all-time favourite mafaldine cacio e pepe – made fresh in-house and perfectly al dente. To share, order the burrata with cherry tomatoes and a pistachio-pesto dressing; charred octopus with hummus, broccoli and chilli crunch; and the addictive parmesan potatoes with truffle aioli. 

Time Out tip: Best believe you'll see a crowd here for the restaurant's happy hour, which runs generously from its opening to 7.30pm daily – yes, even on weekends. Some five cocktails go at $16 each, including refreshing pours of Aeperol Spritz, lemon coolers, yuzu whisky sours, as well as classics like the tropical Singapore Sling and negroni.

12. Sol & Ora

What is it? Latin-Mediterranean restaurant in The Outpost Hotel at Sentosa that feels like a European summer holiday.

Why we love it: The panoramic beachfront views of the calm seas are enough to lure you into this evocative enclave. It all feels like an enchanting Santorini vacation home. At sunrise, the floor-to-ceiling windows illuminate the coved-ceiling dining room with soft natural rays for that perfect brunch hour. Expect fresh pasta, especially the comforting squid and crab cavatelli pasta elevated with Amalfi lemons. Don't miss out on the Sardinian Porcetto, a la roasted suckling pig, that undergoes an intensive two-day brine and dry process right before the Josper blisters it.

Time Out tip: Evening promises a different vibe altogether. Come sundown, look forward to a 180 transformation with daily evening fireworks that don't disrupt the tranquillity – all thanks to the warm light fixtures.
