Now that the Chinese New Year festivities are done and dusted, you can finally take our tastebuds elsewhere to experience the best of what Singapore's dining scene has to offer of late. This month, our picks of the city's new restaurants span the globe – think Korea, Italy, Thai, Laos, France and China. Drim Gold's cave-like interiors are a feast for the eyes, and so are its premium beef and pork cuts. Then there's the casual Japanese spaghetti bar Nolita, offering wallet-friendly pasta in the North. In the unassuming City Gate mall, you can try authentic Laotian and Thai flavours at Ma Der Kin Khao, while those craving a slice of France can visit Les Canons for approachable French bistro fare at equally friendly prices. Finally, Wenzhou's culinary scene gets a shoutout, with the opening of Singapore's first Jiangsu-Zhejiang fine-dining restaurant – Wenzhou Mansion.

1. Drim Gold

We've seen several cave-themed restaurants in Singapore, including Cavern Restaurant in Mandai, Gochu, and even Modu's stone-walled and wooden interiors. This newest addition to Weave at Resorts World Sentosa blends dramatic sculpted ceilings and walls with modern Hanok aesthetics. Drim Gold, a new sister restaurant of the popular Drim Korean Steakhouse at Mandarin Gallery, takes Korean barbecue to the next level. For one, the menu is wider, offering premium meat selections like Hanwoo beef, Jeju black pork, Jeju abalone and Korean eel – all expertly grilled up by the tableside barbecue for a more comfortable dining experience. All eyes will likely be on the Hanwoo cuts, with several must-tries being the house-marinated Hanwoo short rib and a cut of the month, specially selected and available in limited quantities. Short of buying a ticket to Jejy, you can also now savour the island's prized black pork, available in the usual cuts of pork belly, pork jowl and pork collar.

2. Nolita

The pasta craze in Singapore is here to stay. And this time, those living in the North are the real winners. Calling itself a 'Japanese Spaghetti House', Nolita is a casual Japanese-Italian concept that recently found its home in Lentor. Opened by Omoté – yes, the famous chirashi bowl restaurant in Thomson Plaza – Nolita offers 10 flavours of pasta on its menu. And to be even more specific, it's only spaghetti noodles that are served here. In the under $20 section, you'll find the signature #1 A.O.P. spaghetti with smoked bacon, prawns, chilli and garlic olive oil ($19). There's also the ragu alla bolognese, Tokyo Carbonara, Naporitan and wild mushroom spaghetti, all priced at $19 as well. Mid-range options include the vodka vongole with Manila clams ($25) and the nori pesto spaghetti ($23), as well as arrabiata ($21) and lobster rosé ($28) for those who can take some spice. And if you don't mind indulging, look no further than the uni tartufo ($32), which features sea urchin and poached lobster with a truffle cream sauce.

3. Ma Der Kin Khao

Unbeknownst to many, this mixed development mall along Beach Road houses plenty of decent eateries, like the crowd-favourite Beerthai, which was once located at Golden Mile Complex, as well as Japanese fusion restaurant Ovenbird. Opened recently in late November last year, Ma Der Kin Khao is one of the rare places in Singapore where you can find a blend of traditional Thai and Laotian cuisine. Opened recently in late November last year, the casual eatery serves up authentic plates of Soop Pak Lao, a type of Laotian salad which is also enjoyed in the Isan region of Thailand. It's a spicy and refreshing toss-up of blanched greens and mushrooms, with a dressing of fermented fish sauce, pounded ginger, garlic, chillies and sesame seeds. Other specialties include keng no mai, a Lao bamboo soup, and pork cheek (kor moo yang) grilled over charcoal. If you're dining in a group of four, you can also order a wallet-friendly $60 set menu with five sharing dishes, including tom yum seafood soup and a whole steamed seabass.

4. Les Canons

ilLido Group, who are also behind rooftop bars Baia and Southbridge, as well as the Italian restaurant Sospiri, are launching a new French bistro in the heart of town. Far from stuffy French fine dining, Les Canons is all about the comfort that traditional neighbourhood bistros bring – the hearty dishes and the friendly, welcoming atmosphere. Those looking to dine well on a budget can rejoice, as everything is priced under $25 here. Yes, even substantial mains like the steak au poivre (Angus sirloin with pepper sauce and fries), duck confit and beef bourguignon are priced at a comfortable $22, $18 and $19 respectively. If seafood is more up your alley, take your pick between options like the halibut with brown butter sauce ($16), tiger prawns gratin ($19) and truffle macaroni gratin ($16). Equally approachable is the drinks menu – a selection of over 50 French wines, with glasses starting from just $8, and all bottles priced under $100. To sweeten the deal, an all-day happy hour ensures that you can enjoy a pour any time from as low as $6.

5. Wenzhou Mansion

Mainland Chinese cuisine is having its golden comeback moment in Singapore, and Wenzhou Mansion joins the fray as the country's first and only Jiangsu-Zhejiang fine-dining restaurant. Walk in to dark wooden-toned dining rooms, set in direct contrast against the restaurant's white-brick colonial facade. The restaurant offers plenty of private dining rooms – seven to be exact – perfect for hosting business gatherings. On the menu: over 120 dishes representing the culinary diversity of Wenzhou and seafood from the East China Sea. One of the crowning signatures here is the Large East China Sea yellow croaker with scallion oil, nicknamed the "gold of the sea" for its succulent flesh. Equally impressive are the raw marinated Wenzhou crabs, which, at their peak season, are rich with sweet, glistening roe. The glorious platter is doused with an in-house sauce blend to let the natural flavour of the crab shine. Set lunches for two starts at $168, while dinner is priced from $238 for two people.
