Dinner can run the geographical gamut: first-rate hummus; tomato-sweetened stews; crisp, delicate sambosas; and qabeli palaw, succulent charcoal-grilled meat over spiced, raisin-studded rice. The perfumey rose-water ice cream may be an acquired taste.
