Some restaurants celebrate a big birthday with cake. Sunday in Brooklyn is sticking with the stack that helped make it famous—and sharing the spatula with a few neighbors.
The Williamsburg restaurant will turn 10 years old this October and its anniversary plans include a month of pancake collaborations featuring some local heavy-hitters, including Kellogg’s Diner, Leo, Laser Wolf and JR & Son. (There’s even an ice cream cameo, too.)
Dubbed the Sunday Stack Series, presented by Resy, the celebration begins today, October 1. Each participating restaurant will put its own spin on Sunday in Brooklyn’s signature pancakes, with a new collaboration launching every Thursday and running for just one week, giving you four chances to add pancakes to your October calendar.

JR & Son gets the first turn starting today, kicking things off with a caffeinated take on flapjacks that comes layered with coffee syrup, whipped mascarpone, cocoa and espresso powder. Leo will follow on October 8, Kellogg’s Diner on October 15 and Laser Wolf finishes strong on October 22. The latter three pancake creations are still under wraps: Sunday in Brooklyn will reveal the details on its Instagram account. But if we're using the restaurant's own griddle cakes as a metric (Sunday’s buttery pancakes come with hazelnut-maple praline and brown butter, drawing brunch crowds since the joint opened in 2016), things are about to get deliciously extravagant.
For those who prefer their pancakes frozen, Caffè Panna will join the festivities with a limited-edition Sunday Pancakes pint, available for one day only on Friday, October 9. It folds the restaurant’s pancakes into sweet cream ice cream, layered with maple-praline caramel.
Chef Jaime Young, whose résumé includes Eleven Madison Park and Atera, opened Sunday in Brooklyn with Todd Enany and Adam Landsman as the kind of approachable, chef-driven neighborhood spot they wanted to frequent themselves. Their Sunday Hospitality group has since expanded to include Rule of Thirds, Café Chelsea, Teruko and the newly opened Dynamo Room, among others. But this birthday brings the attention back to the original restaurant and its most recognizable dish.
Four guest stacks and a pancake-filled pint should keep the celebrations going. Time to recruit a brunch buddy with strong sharing skills.
