This Mediterranean restaurant is hosting a one-night-only menu dedicated to Milan

Spoiler alert: this won’t be your average dinner of ossobuco and risotto alla Milanese

With the 2026 Winter Olympics in full swing in Northern Italy, our heads have been full of the incredible sportsmanship, breathtaking excitement, and unmissable drama that only a global sporting event can bring. Hong Kong restaurant Salon des Refusés is also setting its sights on Milan this month, though in a completely different manner – through a one-night-only dinner on Wednesday, February 25, as part of its ‘Hommage’ culinary series.

Salon des Refusés’ monthly ‘Hommage’ series is a culinary tribute to the foodie capitals along the Mediterranean coast. Each instalment is a one-night-only special – the first in the series, dedicated to Marseille, took place earlier this year in January. Landlocked as it is, chef Luca Marinelli is still spotlighting Milan as a destination in which seafood-driven cuisine thrives, thanks to the influence of Italians from the southern part of the country bringing their coastal flavours northwards. Plus, topically, there’s a timely overlap, with the Milano Cortina 2026 Winter Olympic Games taking place in the neighbourhood right now. Following February’s Milan edition, Salon des Refusés will prepare to stage dinners themed around Nice, Menton, Genoa, and Sanremo to celebrate their distinctive cuisines.

For this Milan instalment of the ‘Hommage’ series, Salon des Refusés will present a 10-course menu centred around the city’s signature flavours, taking inspiration from chef Luca’s neighbouring hometown of Varese. Dinner will begin with the Cantabrian anchovy, confit Sicilian tomato, and toasted crouton and the red mullet fritti with crusco pepper dip before moving on to a selection of raw starters, including Sicilian red prawn with fava bean and botarga, Mediterranean seabass with ricotta and oregano oil, and bluefin tuna carpaccio with piquillo pepper and capers.

At the heart of the menu, the hot dishes and pasta will comprise Hokkaido scallop with Sicilian pistachio, spaghetti with brown butter, anchovy, and lemon, and baby squid ‘assassina’, borrowing from a Barese technique that intentionally chars the ingredients to achieve smoky caramelisation and a crispy texture. Finally, a hazelnut gelato with hot chocolate sauce and torta aurora ends the meal.

Priced at $988 per person, the ‘Omaggio di Milano’ menu will be available for one night only on February 25. Be sure to reserve a table here to avoid disappointment.
